I’m on a mission to make better food choices for my little one and I’m going to use the blog as a place to store recipes and ideas on what we’ve made. So far some things have been a hit and others have hit the floor at a speed any elite athlete would be proud of! My new mum mission – to reduce the hidden nasties that are preservatives, hidden sugars, salts etc.
One thing I know about my boy is that he LOVES his pasta, so today I’m making a bulk batch of tomato sauce that I can use as a base for a bunch of dinners this week.
Community Announcement: I’m not a nutritionist, just a mum having a go at making better meals, I use a Bellini Intelli Kitchen Master – aka the fake thermomix. This is not a sponsored post 🙂
2 x Carrots
2 x Zucchini
1 x Red Pepper
1 x small onion
2 x Garlic Cloves
2 x 400g Tins of tomatoes
2 x Tsp Vegetable Stock – I made my own using this recipe
Herbs – I used mixed italian herbs
Peel the onion and cut in half, add the garlic cloves. Whizz on speed 6 for 10 seconds.
Add a splash of Olive oil and cook 100, speed 1 for 1 minute
Meanwhile, peel your carrots and chop your vegetables into chunks. No need to go too small as you’re about to grate it all.
Add them to the onion and garlic mix and whizz on speed 6 for 10 seconds. Lower the speed and time if you’d like them chunkier.
Add the tomatoes, vegetable stock and herbs.
Cook on speed 1 at 100 degrees for 15 minutes.
Get your pasta on the boil and you’ll have the whole lot sorted in 15 minutes AND 2 passata jars refilled and a little more to keep for using later.
YUM! Total winner – we even did a round 2!
I served it with pasta and grated cheese for lunch. You could also use it as a base for mini pizza muffins, Quesadillas, as a base for bolognase or add some Chilli for the adults. So Tasty!
My Man just asked why I didn’t wipe the inside of the bellini, like they would on masterchef…. just keeping it real!
