How much do you love when you find a winning meal that is jam packed with goodness and your little person LOVES it!  For me it’s like winning the lotto!

While we’ve been eating it for ages, I’ve not shared it here yet.

Are you ready…..  SO EASY to whip up this baby super food meal, which makes it even better right.  I use a Bellini at home – which is technically a fake thermomix.

Sweet Potato
1 x onion
Mince Meat
Veggie packed special tomato sauce

Sweet Potato Mash

Peel and Chop Sweet Potato add to Bellini with a splash of milk,
Cook speed 1 at 100 degrees for 15 mins
Add a spoonful of butter and blend for 10 Seconds on speed 4

While that’s happening…

Dice an onion, brown it on the stove.
Add and brown Mince meat – I opt for a grass fed variety.
Pour in the magical veggie packed special tomato sauce and simmer….

If you’re right into adding bonus nutrients, I use a sprinkle of dulse flakes.  You can’t taste it and its a natural treasure chest of goodness, with Vitamins A, B1, B2, B3, B6, B12, C, and E, and minerals like potassium, calcium, magnesium, phosphorous, chromium, iodine and zinc and trace elements.

When everything is cooked – pour the meat into a baking dish and spread the sweet potato mash on top.  From here you can serve as is or sprinkle with grated cheese and bake it under the grill for a bit more pizazz to the top.  That all depends on how much time I have, my boy will eat it either way.

I love that you can serve this dish as a bunch of seperate things or all mushed in together.  It’s an easy one to cook the pasta sauce for a meal earlier in the week but make a big batch so you have some for the cottage pie also…. veggies in everything!

Serve it with a salad for adults and your kids if they’ll eat it and then sit back feeling chuffed you have served up a tasty nutritious meal.

I have to confess the pic is my boy with the pasta sauce…..  I’ve not managed to move quick enough to get a cottage pie pic yet.  Stay tuned, but your not missing anything at all… it’s not the prettiest dish!
